Bacanora production was banned for almost 80 years, this amazing spirit is produced in Sonora state, using only one specie of Agave angustifolia and conserving the practices of the past with the revolution of the new generations. Bacanora is a little town in the middle of Sonora´s Mountain chain that encapsulates warm weather and humidity, creating the perfect climate and rich terroir to grow the agave plant.

How It's Made
Agave spirit production is a Mexican tradition across the entire country, each region has its own magic and Sonora is not the exception, with one of the oldest soils in the continent and the light of sun beaming down for long days, the weather is perfect for encouraging agave growth.
Sinohe and his family are part of the distilling heritage of Bacanora, his grandparents continueing the legacy during the prohibition era and continuing clandestine operations during the 80 years it was banned. This kept this great spirit alive, using a brick underground oven, with wood as fuel, and without rocks to transfer the heat, they process the bacanora with passion and take a hands on approach to milling and fermentation, each step has a specific time allocated, to ensure the perfect fermented juice prior to its double distillation to obtain the final product

Beautifully balanced agave, pleasant but very light on the nose for me, but not in flavour, oily, very creamy, with a unique sweetness that reminds of butterscotch, plenty of salt and minerality on the other side to balance it, a little light smoke but nothing harsh, very low fruit and funk, but im not missing it, ideal mezcal for those progressing from tequila.
