La Higuera sotol is a project focused on the Dasylirion genus, this expression is the latest spirit in the production portfolio of master distiller Gerardo Ruelas, using only mature plants of Dasyliron Texanum with exactly the same process of others La Higuera expressions, we seek to identify and share the diversity of Daisylirion plants.

How It's Made
Chihuahua is one of the biggest states of Mexico, In this region the landscape is dry and desert-like, and the soil is poor in minerals and nutrients, over centuries, the plant and the people have adapted to create a symbiotic relationship. Wild harvest Texanum is roasted in pit ovens underground fueled by oak timbers, mechanically milled and fermented in pine vats, and double distilled in copper alembic pots. Maestro Gerado creates an unrivalled collection of some of the most representative species of sotol plants of Mexico.
