The newest expression of Mezcal Derrumbes. Derrumbes Guerrero is an iconic masterpiece of tradition and history smuggled out of the region. Uniquely made from a local agave regionally named Penca Ancha this Cupreata spirit has its own unique identity; the spirit comes from natural spring water to ferment, to a still made from Higuera wood with an internal condenser made from hand-shaped copper. The result is an elegant combination of flavours between fresh and funky.

How It's Made
Israel Rios is the mastermind behind this new and excellent expression of Derrumbes Guerrero, and his skill allows the agave to express itself. Only mature Penca Ancha agaves are harvested and put in a pit-roast with white oak before being milled with a mechanical shredder. The fermentation is carried out in plastic tubs with only wild natural yeast, with the final touches coming from the Filipino hybrid Higuera wood and alembic pot still.
