Oaxaca. Nestled in the mountains of the Sierra Madre del Sur, southwest of Mexico at approx 1600m above sea level. This espadin agave shines thanks to its gentle smoke.
How It Is Made
Pit cooked, tahona crushed, natural fermentation in oak wood vats, natural spring water and double distilled in copper alembic stills. The agave species with the largest distribution of all is also extensively cultivated for mezcal in Oaxaca. Yields 1L of mezcal per 10 kgs of Agave and matures over a life cycle of 6 to 8 years. We are honoured to exclusively import and share this brand with Australia.
