Raicilla is a Mezcal that has been produced in the state of Jalisco for over 500 Years. With its recent Denomination of Origin Protection in 2019, the growth of Raicilla as a stand-alone category is booming. El Lobo De la Sierra (the wolf of the mountains) has been handcrafted by the magnificent skill of Gerardo Peña. This is one of the smoothest Raicillas from Jalisco that will ever cross your lips. El Lobo, Gerardo, has a solid background in wine from his Years in California. Skills that he seamlessly adds to his production of his Raicilla. The result is a beautifully expressive Maximiliana that is so smooth and so fragrant. It is like sticking your face into a bunch of flowers and breathing in freshness and vibrancy.

How It's Made
El Lobo, Gerardo Peña’s years’ of skilled wine and Raicilla production are on full display with his first stand-alone product. Made from Agave Maximiliana, found high in the Sierra Occidental in the village of Jacales. This high altitude agave releases high sugar content and unique flavours when oven-roasted with black oak timber for 5 days. Once milled it is left to ferment in large oak vats with wild airborne yeast. Gerardo does not use copper stills rather preferring to use stainless steel alembic stills to add a steely minerality over two distillations. We are honoured to exclusively import and share this brand with Australia.
