Maestro ‘Che’, real name Juan José ‘Che’ Hernández is a second generation Mezcalero with over 25 Years experience in mezcal production in the region of Hacienda Santa Isabel, San Luis Potosi. He follows the original recipe of his late father ‘Don Che’, producing a smooth yet pleasantly fragrant mezcal with an unmistakable chile jalapeno and bell pepper taste unique to the terroir and Salmiana Verde agave.

How It's Made
The agave salmiana is steam-heated in steel oven’s, similar to the way tequila is cooked. Milling is done on an ancient juice extracting crush. Fermentation occurs in ground-level cement tanks and is double distilled in copper alembic stills. One of the few agaves that resist the harsh conditions of the Mexican high plateau, Verde is normally harvested from ample wild populations and yields 1L of mezcal per 30 kgs of Agave and taking 12 to 16 years to reach maturity.
