How It's Made
Australian grown and Australian produced, this 18-year-old, hand-harvested, wild Americana Agave, is pit roasted for 5 days underground, then removed and left to rest for a further 7 days before being mechanically milled and crushed prior to fermentation.
Fermentation occurs in stainless steel tanks for 5 days and then double distilled in copper pot stills. Truly small batch production runs and is extremely limited.

Only just opened the bottle and I can already smell cut jalapeños and dried chillies off this incredible spirit! Incredible mango and cream when coming closer with my nose into the glencairn, sweet smelling floral very complex
Palate is vegetal and mineral, slight sweetness, moderate smoke that doesn’t dominate but accentuates the characteristics of the agave
