How It's Made
Australian-grown and Australian produced.
Wild Agave americana is harvested at maturity, 18-20 years. Pit-cooked underground for 7 days. Agaves are then rested for 2-3 days before milling. Milling is by machete and electric shredder. Fermentation occurs over 5-12 days in wooden open top barrels using air born yeast. Twice distilled, without fibers, in a solar powered copper pot still. Each batch is very small and the ABV is decided depending on the individual batch.
Joven is rested in glass carboys for 2-12 months before bottling.

Only just opened the bottle and I can already smell cut jalapeños and dried chillies off this incredible spirit! Incredible mango and cream when coming closer with my nose into the glencairn, sweet smelling floral very complex
Palate is vegetal and mineral, slight sweetness, moderate smoke that doesn’t dominate but accentuates the characteristics of the agave
A must buy for those looking at exploring the world of agave beyond Mexico and the entry way to the pioneers of it in Australia
