Black Snake are the small batch leaders in honouring the cultural and traditional processes of making Mezcal, or in this case, Agave distillate, in Australia—honouring the wild-grown, hand-harvested, milling, fermentation and distillation techniques of yesteryear.
This is truly a hands-on operation, from start to finish, made the right way, all under the Australian sun. The team at Black Snake are committed to maximising the sustainability of the process and continuing their journey of creating a unique Australian Agave spirit.

How It's Made
Australian-grown and Australian produced Ensamble uses both mature, wild Agave americana, 18-20 years old and wild Agave angustifolia, 8-10 years old. The agaves are pit-cooked together underground for 7 days then rested for 1-3 days before milling. The agaves are milled together by machete and electric shredder. Fermentation occurs over 7-14 days in wooden open top barrels using air born yeast. Twice distilled, without fibers, in a solar powered copper pot still. Each batch is very small and the ABV is decided depending on the individual batch. Ensamble is rested in glass carboys for 8-12 months before bottling.
This Ensamble is very rare, small 50 litre batch, only made every second year.
