Vanilla, cherries, sweet fruits, nuts, mineral and a gentle bbq smoke
How It's Made
100% Agave Durangensis (Cenizo) made the traditional way through pit roasting. Heat fuelled by black oak, the cooked Agave is then crushed by hand with axes. Fermentation in this region is done underground because of cold nights using natural yeast in wooden boxes and finally distilled in a unique hybrid wood-copper still mixing the knowledge of the Sierra Occidental and Sierra Oriental techniques.
