During the Mexican Revolution, José Doroteo Arango, better known as Pancho Villa, was the leader of the northern forces and gained his fame for leading the rebellion to defend the people from the abuses of Government tyrants.
To honour Pancho Villa, a Master Tequilero and a local Jimador field worker gave his best agaves and together they created a very authentic tequila using an artisanal recipe and put it into a hand-crafted bottle. This was their way of thanking Pancho Villa for ousting the local aggressors.
Doroteo Arango was so happy with the gift that he asked the tequilero to put his family’s name on the bottle.

How It's Made
Using only 8-year-old mature blue agave that is hand-harvested at a weight of 35-50kgs to ensure the sugar content is at its peak, the agaves are cut in quarters and then slowly steam cooked in stone ovens for 38 hours. Fermentation takes up to 40 hours with specially cultivated yeast to enhance the flavours and a natural temperature.
Distillation is done in 2 steps, Columns still for the 1st distillation, but the 2nd distillation is done in copper pot stills using the Charentais process (how congac is distilled) the tales and the heads are separated in different cuts and not used. This enables us to concentrate the most delicate aromas and bouquet of the agave, conserving only the best components of the hearts.
The second distillation rectifies the tequila at 55%, which is then diluted with de-mineralised water and filtered for polish and shine before being aged for 6 months in American Oak foudres of 10,000 litres.
