This 120-litre single varietal batch by Maestro Palenquero Atenogenes Garcia is a quintessential representation of the flavours and aromas of wild agave Bicuixe. The distinct terroir of Miahuatlan, Oaxaca plays a key role in the development of Bicuixe agaves, a subvariety of the “Karwinskii” family. The region and terroir are key to the backbone of this spirit, sitting at 5200 feet above sea level.

How It's Made
Approx 5,200 meters above sea level Father Atenogenes and son José are accomplished distillers, particularly when tasked with distilling agaves that belong to the Karwinskii family (Bicuixe, Madrecuixe), which is endemic to Oaxaca. The father and son team mash their agave with a large stone called a tahona that is pulled by a bull, ferment the resulting mash and tepache in pine and cypress tanks with hard well water and then double-distil their spirit in copper pot stills.
Between the two of them, father and son distil about 2,000 litres annually all from their palenque in San Isidro Guishe, Oaxaca. Batch Size of 120 litres and we have the pleasure of importing this to Australia exclusively.

5 Sentidos Bicuixe is a great example of the robust nature of their spirits (Sierra Nego is amazing).
Strong agave flavours over a sweetness that hints at candy, but also clay, peppercorns, jalapeno, and maybe some citrus.
ABV on this bottle (80/150, Batch BCAUS 01-20) is 49.56% which does offer a bit of burn but the flavours it leaves behind are wonderful.
Perfect on its own or slip it into a flight with something sweeter like a tobala. (Better still start your own 5 Sentidos section of your bar).
