Smells Like

Bold smoke from roasted agave leads into a flash of charred orange and grilled pineapple aromatics. Earthy undertones linger on the finish with wafts peppery spice.

Tastes Like

Mezcal Verde Amaras has a smooth and bright profile, approachable smoky notes of cooked agave with small touches of spice and pepper, a hint of sweet caramel, ripe peaches and grassy notes. Great for mixed drinks, best for at-home and out-of-home mixology, due to enhanced smoky profile.

How It's Made

The 100% Espadín (Agave angustifolia) is cultivated in Tlacolula, Oaxaca and matured from 6 to 8 years before harvest. The cooking method relies on roasting in traditional conical stone ovens using a unique blend of three sustainably sourced woods: oak, ocote and pirul. Each wood is sustainably sourced from certified suppliers with active reforestation plans. This tri-wood roast imparts a layered smokiness thats distinctive, yet balanced.

Milling is completed using an Egyptian mill (tahona stone mill), preserving fiber integrity and traditional texture. Fermentation is completed over 4-5 days in open-air fermentation in pinewood vats giving that piney zing note on the palate. No sulfites or additives are used in production, our full flavour comes from the wild yeast native to the local environment drives a natural, spontaneous fermentation.

The fermented mash is then double distilled in copper stills to ensures purity, clarity, and retention of nuanced flavour compounds. Bottled at 42% ABV, striking a balance between intensity, sipabilty and mixability.
