Maestro ‘Aarón’ Aarón Robles is a first generation mezcalero with over 15 Years of experience in artisanal mezcal production. Recently relocating his Palenque to San Pedro Totolapam, Oaxaca alongside a river that runs through the Sierra Madre del Sur, southwest Mexico. His Palenque is in a beautiful hidden location only accessed by foot, an hour away from San Pedro. Tobala is the most revered of agaves.

How It's Made
Increasingly difficult to find agave in the wild, agave Tobala is in abundance here and sustainably managed by the community in this micro-region. Yields of 1L of mezcal per 10/15 kgs of Agave, taking 10 to 12 years to reach maturity. Pit cooked, tahona crushed, natural fermentation in oak wood vats, natural spring water and double distilled in copper alembic stills. We are honoured to exclusively import and share this brand with Australia.
