This is the first collection of its kind with one extraordinary tequila from each of Jalisco’s legendary towns, crafted by the artisans themselves, not commissioned or altered. Each release showcases unfiltered terroir and technique, bottled with full transparency. No blends. No shortcuts. Just the pinnacle of agave craftsmanship, distiller by distiller, town by town.

Tequila ArteNOM Selección de 1579 comes from the mountain town of Jesús-María (elev. 6,079’) in Tequila’s highest altitude agave region, and the El Pandillo Distillery (NOM 1579). Felipe Camarena is arguably one of the most forward-thinking and sustainable distilleries in the business. There, Felipe masterfully crafts this bright, aromatic tequila from stressed hillside agave plants, slowly roasted in brick ovens and macerated intact with fiber for a pronounced agave flavour.

How It's Made

Tequila ArteNOM Selección de 1579 Blanco Clásico comes from the highest elevation growing region possible, 2069m above sea level. The best selected and most mature agave’s (28 brix) are halved & quartered (cogollo-removed), steam-roasted in low-pressure brick kiln ovens for 30 hours. The roast includes a 6hr pre-roast to melt-off bitters and 6hr cool-down allows for a tempering of flavours. Juice extraction with tahona-like metal roller-crusher (aka “Frankenstein”).

Fermented in timber tanks with fibres to allow maximum complexity to shine, then double-distilled in copper-pot stills to approx. 56% ABV and reduced with reverse-osmosis demineralized water. The water for proof adjustment is a blend of rainwater and filtered well water. Active aeration prior to bottling for approx 6 months.

A key production call out is the active aeration which occurs prior to bottling. For up to 6 months the blanco Tequila is aerated to agitate the less desirable, and sometimes ‘aggressive’ flavours, stimulating and highlighting new flavour compounds that we love.
