NODO Espadín is born in the heart of Oaxaca’s central valleys, a land teeming with rich soil, and time-honored traditions. Mezcal’s soul is in Oaxaca and every step in its creation is a testament to dedication, crafted with mature agave, pure water, and wild yeast from the environment, achieving a harmonious balance between consistency and the natural diversity that defines each batch.

How It's Made

Mezcal is more than just a spirit, it’s a legacy to Mexico’s distilling heritage before the word ‘Mezcal’ was owned by forgeign interest to classify it as such. Mezcal is the word of the people and their indigenous roots. NODO Espadin is a testament to centuries of agave tradition, where an extraordinary range of species and artisanal techniques thrive in Oaxaca, the birthplace of Mezcal.

At the heart of this craftsmanship is Maguey Espadín, harvested only at peak maturity at circa 10 years. This over ageing of the Agave ensures the richness of the soils, seasons and climate deliver unrivalled complexity in every drop. The journey begins with piñas slow-roasted in underground stone pits, heated by fragrant oak wood, infusing them with the unmistakable smoky depth mezcal is known for.

Milling the cooked agave is a labor of precision and tradition, first it is hand-chopped with a machete, then meticulously crushed using a tahona, extracting every nuance of flavor. Fermentation unfolds naturally, relying solely on pure spring water and wild yeast, allowing the environment to shape each batch uniquely. Fermentation occurs over five to eight days, and is then double-distilled in copper pot alembic stills, ensuring a spirit that captures the soul of Oaxaca with authenticity and balance.

This is Mezcal in its purest form, deeply rooted in tradition, shaped by the land and its influenced by the true custodians of the land, not by the Denomination of Origin.
