How It's Made
The production of El Cristiano Mezcal begins with farming and harvesting of ripe 100% Espadin. Cooked underground for 5 days to release the sugars. The cooked agave is then split by a machete and hebradoras, and finally the sugars are extracted using a tahona to slowly and softly release the fructan-laden pulp. The patience of fermentation, with fibres in, is done in large wooden vats with wild airborne yeasts. Once fermented it is double distilled in Copper stills, and slightly reduced with spring water to 44% ABV to complete the world’s most delicious Mezcal.
