The Art of the Maestro Mezcalero
Unlike mass-produced spirits, artisanal Mezcal is a hands-on process from start to finish. The journey from plant to bottle is a labour of love:
- The Harvest: It begins with mature agave, some of which, like the wild Tobalá or Tepeztate, can take over 15 years to reach peak readiness. The jimador expertly harvests the plant, cutting away the leaves to reveal the heart, or piña.
- The Cook: The piñas are cooked for days in earthen pits lined with volcanic rocks, fuelled by local wood like black oak. This is where Mezcal develops its characteristic smokiness.
- The Crush: Once cooked, the piñas are crushed to release their sugary juices. While modern methods use mechanical shredders, traditional producers use a stone wheel, or tahona, often pulled by a horse or donkey, or even crush the fibres by hand with large wooden mallets.
- The Fermentation: The crushed fibres and their juices are placed in open-air vats made of wood, stone, or even animal hide. Wild, airborne yeast kicks off a natural fermentation, a process that can be unpredictable and is guided entirely by the Maestro’s experience.
- The Distillation: The fermented liquid is then distilled, often twice, in small copper or clay pot stills. This is where the final spirit is born, capturing the essence of the agave and the entire process.

This process creates a spirit bursting with notes of overripe fruit, sweet cream, candy apple, and baked cinnamon.
- 5 Sentidos Sierra Negra by Alberto Martinez: Made from the majestic Sierra Negra agave, which can take up to 25 years to mature. This spirit, distilled in clay pots, offers complex notes of pineapple, currants, and sweet herbs with a dusty, mineral finish.
