Sotol

Sotol is a distilled alcoholic beverage that originates from northern Mexico and shares similarities with Tequila and Mezcal. Sotol has a long history in the region, with indigenous peoples using it for centuries.

However, it has a somewhat clandestine history and production was not legalised until 1994. In 2004, the Mexican government assigned an appellation of origin to Sotol, stipulating that it can only be produced in three Mexican states: Chihuahua, Coahuila and Durango. Despite the appellation, Sotol is produced throughout Mexico as well as in the southwestern United States.

Sotol is made from the fermented sap of the desert spoon plant (Dasylirion wheeleri), also known as Sotol, which is a member of the asparagus family. The plant is native to the Chihuahuan Desert and surrounding regions.

The production process involves roasting the plant's hearts, or piñas, and then fermenting and distilling the juices. The resulting spirit has a unique flavour profile, often described as earthy, vegetal and slightly smoky.

Tequila is produced mainly in the state of Jalisco and certain parts of nearby states, using only blue agave plants. It undergoes a specific production process and is known for its smooth and fruity flavours.

Mezcal, on the other hand, is produced in various states across Mexico and can be made from different species of agave. It is typically produced using traditional methods, including the use of underground pit ovens for roasting the agave, which gives it a distinct smoky flavour.
