How It Is Made
This sustainably harvested agave Angustifolia, commonly known as maguey Espadín, is all estate grown in the central valleys of Oaxaca in San Juan del Rio. Typically, it takes this agave 7-9 years to reach maturity and it requires 7-10kg of agave to make 1 liter of mezcal.
Master mezcalero, Saul Martinez, with three generations of experience, produces this exquisite mezcal. The water is sourced from a deep well water. The cooking of the Agave occurs in a traditional conical lava rock pit for 3 days. The milling occurs via a horse drawn stone tahona which gently and slowly crushes the agave.
Fermentation occurs via a natural in open air wooden oak vat for 3 days. The distillation occurs slowly and is double distilled in a copper alembic still. The glass, the cork, the paper, the ink, everything is recycled, sustainably sourced, organic and fair trade certified.
