Product Description

Maestro ‘Ventura’ José Ventura Gallegos is a Second generation mezcalero with over 20 years of experience in artisanal mezcal production. Working with his favoured agave Cenizo from Nombre de Dios, Durango. Ventura’s vinata and agave are sourced in the semi desertic ‘Altiplano duranguense’, northwest of Mexico a microclimate perfect for growing various species and delivering some of Mexicos most complex yet balanced Mezcals.

Leather, wet clay and grassy fields.

Tastes Like

Buttered popcorn, coriander and stone fruit.

How It Is Made

Pit cooked, mechanical grinder, ground-level wooden vat fermentation and distilled with a mixed alembic of copper and wood. Cenizo is the most widely used agave for mezcal production in Durango, mostly harvested from wild agave. Cenizo has strong resistance to frosty temperatures during the winter seasons here and yields 1L of mezcal per 20 kgs of Agave and matures over a 10 to 12-year life cycle.
